Strawberry Vinaigrette recipe
Vinaigrettes don't get better than thisstrawberries make for a sweet, mellow dressing that can double over meats and roasts.
Ingredients:
1 cup strawberries, fresh or frozen, thawed
¼ cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey
½ teaspoon dried basil or tarragon
¼ teaspoon salt
¼ teaspoon black pepper
Directions:
1) Place strawberries in a blender or food processor. Puree until smooth. Add remaining ingredients and blend until thick and smooth. Chill at least 1 hour before serving.
