Roasted Garlic Dressing recipe
Roasting garlic is quite simple, and well worth the effort for the resulting taste. Luxuriously sweet, with only milt hints of garlic spice, this dressing is a dream with crispy lettuce, olives, and parsley.
Ingredients:
2 heads garlic
2 tablespoons olive oil
½ cup mayonnaise
½ cup buttermilk
¼ cup chopped fresh basil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
¼ teaspoon black pepper
Directions:
1) Preheat oven to 400°F. Cut about ½-inch off tops of garlic heads; drizzle with olive oil. Wrap in foil and roast 1 hour, until very soft. Unwrap; when cool enough to handle, squeeze garlic from skins.
2) Combine garlic, mayonnaise, buttermilk, basil, lemon juice, mustard, and pepper in a blender or food processor; puree until smooth. Chill at least 2 hours before serving.
