Champagne Vinaigrette recipe
Have a half-bottle of Champagne leftover from that fancy dinner party? Put it to good use in this elegant vinaigrette that will extend the bubbly's life a few more weeks.
Ingredients:
1 cup extra virgin olive oil
¼ cup champagne vinegar
¼ cup champagne
1 teaspoon Dijon mustard
1 teaspoon honey
1 clove garlic, minced
1 small shallot, minced
½ teaspoon salt
¼ teaspoon black pepper
Directions:
1) Combine all the ingredients in a blender or a food processor and puree until smooth.
